Hello there friends! Today I’ll be sharing one of Jonathan and I’s new favorite summer meals – Summer Vegetable Salad. 🙂
Now, the garden is currently overflowing with summer vegetables, squash, cucumbers, tomatoes, basil. You name it. And what exactly do you do with all of these when you’re looking for your next #MeatlessMonday meal? You literally chop them into chunks and toss them into a salad! Trust me it is delicious, refreshing and most importantly, healthy.
Ingredients
Cucumber
Heirloom Tomatoes
Red Onion
Feta Cheese
Basil (for garnish)
Homemade Vinaigrette
**Quantities for these ingredients are really based on preferences.
Step 1 – Chop up your vegetables
The order in which you do this doesn’t really matter. I started with the cucumbers, chopping into 1 inch chunks.
Then came the heirloom tomatoes — how beautiful are these. Can’t get tomatoes this red in the grocery store! I’ll tell you that. These actually came straight from Jonathan’s garden/urban farm – Off The Bluff Farms. He actually will be selling beauties like this throughout the summer at the French Town Farmers Market in Tallahassee and around town – check out his Instagram to follow along.
After the tomatoes, you will add in your red onions. Personally, I feel like the red onions add more of a sharp taste without being overtly onion-y (if that’s a word LOL). You can in fact go overboard with these though, so I would stick to incorporating less and then adding more to taste.
Step 2 – CHEESE it up!
Feta cheese is on the menu for this dish. Adding in feta really counter-balances the natural taste of the vegetables and packs a small punch. Besides, who doesn’t like a little cheese in their salad.
Step 3 – Dress your salad
Ingredients for your vinaigrette include: Red wine vinegar, garlic powder, olive oil, salt and pepper. SUPER SIMPLE!
Once you’ve mixed up in a separate container (we just used the remaining container from the feta) pour over your salad.
Finally, finely chop a few leaves of basil and sprinkle over top!
I lied – there is technically a 4th step.
