Sometimes I wonder how other people’s dinner decisions go. For Jonathan and I, it usually goes something along the lines of, “What do you want for dinner?” “I don’t know, something good” “Okay good, that’s helpful” “Glad we agree, now what are we going to eat”. If this is you, then this easy and delicious meal is the perfect dish to enjoy for dinner and even for leftover lunch the next day! Best part is, it’s super simple and doesn’t require a crazy amount of chef skills. It’s called Chicken Bistro!
This recipe actually comes from Jonathan’s Mom, Lisa, who makes this dish quite often and has hooked her sons and husband on it as well as me. 🙂
Chicken Bistro
Ingredients
1 box of Penne pasta
1 bag of sun-dried tomatoes
Feta Cheese
1/2 Red onion
Lite Caesar Dressing – our’s was the brand “Marie’s”
Fresh Basil
1 Container of grape tomatoes
Grilled Chicken
Step 1 – Cook your chicken and boil your pasta
Ever since we bought a grill last year, we look for every excuse to grill our chicken instead of cooking it on the stove or in the oven. There’s just something about that grill char on your chicken that adds that extra flavor.
Toss your raw chicken in a few spices and put on the grill. Cooking all the way through!
As the same time, put your pasta on to boil. Timing these perfectly is the key to putting your dish together!
Step 2 – Prepare your fresh ingredients
While you’re waiting for your cooked ingredients to be done — work on getting your fresh ingredients together.
This includes your basil and tomatoes. Since summer is right around the corner, one of our basil plants is starting to produce! YAY for summer pesto! Jonathan and I headed out to the garden to pick some fresh leaves for the dish.
Take your grape tomatoes and slice them in half. You can use a whole container of them – that should be the perfect amount.
Step 3 – Combine your ingredients
Once your chicken is done cooking and your pasta is perfect, it’s time to combine all of your ingredients together!
First comes the basil and the tomatoes
Add that CHICKEN. Nom.
Dice and add in the red onions
Don’t forget the sun-dried tomatoes. They add a nice sweet taste to the dish
Mix in your caesar dressing and TOSS!
Finally, sprinkle on the feta cheese. Because what would pasta be without cheese?
Voila!
The easiest chicken dish, Chicken Bistro. You can eat it warm, or you can pop in the fridge for 20 minutes and let it cool, kind of like a pasta salad. It’s really up to you!
